Crispy Swoodles with Bacon

Zoodles, swoodles, or vegetable noodles, it all adds up to a very low-carb meal that works perfectly with any diet. I’ve owned the conical style spiralizer and the hand crank one. I dream of getting the Kitchen Aid attachment.

Anyway, the conical style one works quickly and easily. I had difficulties with the hand crank one. Other people I know swear by the hand crank version.  Figure out what you’ll actually use.

What If I Don’t Have a Spiralizer

If you don’t have a spiralizer, you can cut the vegetables up into matchsticks and use them. You can also use spaghetti squash for easy vegetable noodles. And you can expand this with zucchini, summer squash, and turnips. Check out my prior post for a great video on knife skills.

My local Trader Joe’s sells broccoli slaw. They’re small enough that they could be added in. It’s just that they’re not long. But they would be tasty after being roasted.

If you can’t find the white sweet potatoes, use regular ones. My friend is addicted to purple sweet potatoes. So try a variety and see what you like the best.

Another good course is Bruce Weinstein’s Master the Methods: Roast, Braise, Sauté & Pan-Fry but that’s more on general techniques than just roasting.

Winter is a great time to roast since you don’t mind heating up the kitchen.
