Avocado Chips

You know avocado chips had to happen. And they're super easy to make.  Watch this video.

And because the recipe calls for pork rinds, it's perfectly Paleo.

Here's the recipe from Man Can Cook
Ingredients:
– one avocado
-100 to 120 ml avocado oil
-one to two eggs
-50 g pork rinds, processed into a crumb in a blender or food processor
-1/2 tsp salt
-1/4 tsp pepper

Method:
-cut the avocado in half and remove the stone. Then slice into chip sized strips with the skin on. Once cut, remove the skin
-in a bowl, beat the eggs
-on a plate, mix the crushed pork rinds with the salt and pepper
-dip avocado chips into beaten egg (I put mine in with a fork – less messy!), then place onto plate with rinds.
-coat chips evenly with rinds
-heat oil in a large saucepan or frying pan until it is hot (drop a crumb or two of the pork rinds in it – if it starts to bubble, it is hot enough)
-lower to a medium heat then carefully place chips into oil. Cook for 3 to 4 minutes each side. Take out once cooked and place onto a paper towel. Serve immediately

You can also bake them!
